Vinification Details
Classic red vinification without the addition of sulphur dioxide. Fermentation was activated with selected yeasts, which produce limited sulphur dioxide, and took place at a controlled temperature of 25 degrees for one week. The wine was then filtered and stored in tanks at a controlled temperature to avoid oxidation.
