Preparation and Usage
The general rule of thumb is that all herbs should be infused at 100C, to dissolve the essential oils. After long experimentation looking for the best flavour extraction, we found that chamomile (like tea), contains bitter compounds. The best flavours are released at lower temperatures treat it like a green tea, 70C. This brings out all the sweetness and leaves the bitterness behind. It is the only exception to the herbal rule.
